Happy New Year - 2012

Happy New Year!

In the 2012 my goals are simple but so important!

I am starting the year off with the commitment to myself and family to:

  • Do a better job planning meals and eating at home more


  • Finish the bible reading plans that I start.  Whether it be a daily devotional, a chapter or even a passage, I will invest daily in His word.


  • Spend less time watching reality TV.


  • Walk the dogs daily.  We both need the fresh air.


  • Turn off the electronics after 8:30p.  For some that might not be a big deal, but I realize I spend too much time on Twitter, Facebook, Instagram and Pinterest.  Instead, I need to wind down each evening with a good book and bath.


  • Focus on my life verse DAILY -- Romans 12:9-13

So with that said, I begin with my planned dinner meals for the week....


Sunday:
Black Eye Peas
Mexican Skillet Cornbread

Monday:
Carnitas Tacos (Crockin Girls)
Green Salad
Cheese Dip/Chips

Tuesday:
Creamy Chicken Casserole (Southern Living Easy Weeknight Favorites)
Mandarin Orange & Lettuce Salad

Wednesday:
Baked Potatoes (loaded with broccoli & cheese and/or butter, cheese, sour cream, bacon)

Thursday:
Sliced Ham
Homestyle Mac & Cheese (Kraft)
Buttered Green Beans (Southern Living Easy Weeknight Favorites)

Friday:
out

Saturday:
White Bean Chili

makes plenty so I'll freeze some for another meal!

Emergency Survival 72 Hour Kits

Some people think I'm crazy for putting together these emergency survival kits for my family and pets. 
 
I say better to be prepared and safe than sorry!  I've lived in areas prone to earthquakes, floods and tornadoes and you never know when a natural diaster may strike.
 
When disaster hits, it can take up to 3 days for relief workers to reach some areas. Having a 72 hour kit will supply you with supplies and food you need to survive for 3 days. 
 
 
 
It seems like a lot of stuff for 72 hours but you never know what kind of emergency could come your way.  Luckily, it all fits in a backpack!
 
Find bags that can be easily carried by each person in your family.  I found these bags at Target for $10 a piece.  The "Back to School" clearance sales are a good time to look for back packs!

Don't forget your pets!

I was able to find most of the non-food items at our local dollar store which saved me a lot of money! There were so many different lists, it was hard to know what should really go in a 72 hour kit.  You can Google "72 Hour Kits" and find lists of recommended supplies if you want to adjust our list.

and they call it Puppy Love

Thanks to this little muffin of love, I have not done any laundry in a week.  We have not had a full nights rest.  The house is messy.  Our eyes are glazed over.  The other pups hate us.

Would not - could not - will not EVER EVER get rid of His Royal Jetty Punch.

Football players have been practicing all summer.
As we pass by our school field, my boy stares with longing eyes.
Its almost been a year since an injury on the field saved his life.
Who'd have thought a concussion could be a blessing?
It's still hard to understand why this happened.

Meal Planning


I am NOT a Fan of Grocery Shopping.....
However, school begins for us this week so I am resuming my Sunday evening ritual of planning the weekly menu.  After doing a better job of tracking meal expenses this summer, there is no denying that we spend WAY too much eating out.  Usually it is just for convenience or my laziness.  So, with the help of EZ Meals, Pioneer Woman and my own recipes -- we will be eating at home as much as possible.
Menu for the week of August 15:
Monday -- Grilled Marinated Chicken, Pasta Primavera & Italian Bread

Tuesday -- Pork Chops, Scalloped Potatoes & Salad
Wednesday -- Slow Cooker Stroganoff over Noodles & Green Beans
Thursday -- Breakfast Casserole, French Toast Sticks and fresh Strawberries
Friday -- Cheeseburger Sliders, Steak Fries & Corn on the Cob
Saturday -- Mexican Casserole, Tortilla Chips, Cheese Dip, Spanish Rice and Salad
Sunday -- late church so late lunch/dinner out then prepare for the next week.

Debate

While visiting my Granny last week I had the joy of visiting one of my favorite "food court" places to eat -- Hot Dog on a Stick.

This was a staple for me on Saturday afternoons while my friends and I hung out at the mall.  A hot dog on a stick and a large lemonade  The employee uniform never seemed odd to us and I was surprised to learn that the uniform has remain unchanged in the 25 + years.

The debate is this.  While talking with my office mates about this fine food establishment, I was told they never heard of it.  And the question was, "Isn't that just a corndog?"

No, my friend.  It is a...Corn Dog on a Stick.  Always has been and always will be.
